Angel left Buffy for a few reasons, but they all center around the fact that he is a vampire and she is not. 1) He has no ability to give her a normal life, including children and simply being able to go out in the daytime. 2) He canot make love to her or else he will lose his soul. 3) He is immortal and she is not. Eventually, she will become old and he will be the same. As Mayor Wilkins (the main antagonist of Season 3) said, his eternal youth caused his lover to grow hateful and jealous of him. Basically, Angel left Buffy because he felt that being with her was selfish on his part and that it kept her from being with someone that countered the three reasons above. He truly loved her, so he did what was ultimately best for her.
It's really complicated as most relationships are but pretty much because if Angel was ever to experience complete 'happiness' the curse that gives him his soul would break and he would become the menacing vampire he once was. Which of course happened in Buffy. But it is also because he can't give her what she needs, as a human. There was one episode in Angel where he became human and Buffy and him were together and it was all perfect until Angel realised that he was now a liability to Buffy and could get her in danger because he couldn't really defend himself or the people of LA. So he was turned back into a vampire. It's depressing because they never really stopped loving each other.

In Chosen, Buffy and Angel discuss Buffy's future and discuss whether the future was with Spike. This was also continued in Angel only with Spike showing off to Angel about his relationship with Buffy

Angel and Buffy were togather till season 3 or 4. Then Angel left on buffys graduation day to L.A. to protect her. Then buffy falls inlove with spike in season 6. Buffy obviously loves both Angel and Spike, but its Angel she truly loves. I hope this answer isn't biased or anything, for I am a Bangel shipper(though I like Spuffy too).
They do sometimes, but it is not essential to watch one show to understand the other. For example, at the end of Season 4 of Angel, Angel is given an amulet to deliver to Buffy so she can win an important battle. When Angel arrives in Buffy's show, he gives it to her, with little needed explanation as to what happened in Angel's show. By watching both, it's definitely easier to understand plot points, but again, it is not completely essential. Anyway, Angel started during Buffy's 4th season, so the seasons coincide as such, "Buffy" and "Angel" respectively: 4-1, 5-2, 6-3, 7-4, then Angel's last season, 5, happens after "Buffy" has ended.
