The whole idea of this show was that Matt Dillon was too fast to be shot, but I do remember at least two episodes where he had been shot. One was "just a flesh wound" and his arm was in a sling. The other took place on a train and Doc had to get the train to stop so he could operate without the constant movement. The problem was there were armed criminals on the train who were told Matt was already dead, so they wouldn't go after the wounded sheriff. There could have been other episodes, but it is doubtful.
