There was NO ONE on the real Titanic named Jack Dawson. Jack Dawson was a character made up for the movie. The CHARACTER really died. He died in the icy water, and she let his hand go. There is a lot of symbolism in the movie, but the movie took dramatic license. It is NOT 100% fact.
