She's apples or she's all apples or any variation on the apple theme comes from rhyming slang. It is Australian. It came from the rhyme, sugar and spice and everything nice. Well It got turned into apples and spice which means the girl is nice. Since most rhyming words are dropped the phrase is, she's apples. She's all apples means everything is alright.
