In North America we mean the Monday coming after tomorrow (your Sunday) -- the next immediate Monday.
However, my understanding is that in the U.K. (and perhaps, in Australia and New Zealand) next Monday comes in 9 days, being the Monday after the immediately coming Monday.
Unfortunately, many young university graduates from the U.K. are teaching ONLY British English vocabulary all over Eastern Europe and Asia. Their students are NOT MADE AWARE that they are learning ONLY British cultural and vocabulary versions of Standard Educated English. When these English learners are online ( 90 % of online traffic in English is in North American English ) they can easily get confused.
As a Canadian professor of English, teaching in Asia for the past 13 years, I'm constantly surprised that so many of my English students are not aware of the North American differences so common on the 'net. Well educated speakers of English should be aware of the two mainstream English versions.
Thus, unfortunately, too much of my class time is spent clearing up this comprehension problem when undergraduates and even graduate students are researching material in English on the 'net.

I am Canadian and I have always considered the term 'next' in relation to the term 'this', as in 'I am going to a party this Monday' as opposed to 'I am going to a party next Monday.' The first sentence has the party happening on the Monday following the Saturday in question; the second sentence has the party happening on the Monday after the Monday following the Saturday.
Since this is obviously a source of much confusion, whenever this terminology comes up in communications, I am always clear to point out the actual number of days away from today. If today is Saturday, then the party this Monday is two days away, whereas the party next Monday is nine days away.
Next Friday would be 4 days after Monday, so it would be on the following Friday.
"Next week" refers to the upcoming week after the current one. For example, if today is Thursday, next week would start on Monday.
Both are correct, but "I will see you on Monday next" is more commonly used in British English. "I will see you on next Monday" is more commonly used in American English.

When you say next Monday on a Friday, it means in three days. There are two full days between Friday and Monday. The weekend, Saturday and Sunday is between Friday and Monday.
