Women certainly were authors and actors. They were active in other performing arts professionally, and there are dozens of female troubadours whose names are known.
I can only think of one actress of the Middle Ages, and that was Empress Theodora, the consort of Emperor Justinian I of the Byzantine Empire. I do not recall having seen others, but I know she was looked down on because actresses had a bad reputation. The very fact that they had a reputation tells you that there were more than one. Women were excluded from some types of performances in some places. I would be surprised if they were excluded from mummings, as these plays generally broke the normal rules, but they might have been.
As to Authors, those I can think of offhand include Margery Kempe, Christine de Pizan, Marie de France, Hildegard of Binged, and Julian of Norwich. There were many others whose names to not come to mind easily just now. Margery Kempe was particularly interesting because despite the fact that she was of common rank and without any connections to nobility, she was one of the most well travelled women in Europe and wrote what is regarded as the first autobiography in the English language.
Medieval women authors were not all operating in literature. Trotula of Salerno was a physician who wrote extensively on women's health.
