It is hypothesised that ancient man, possibly even predating the Mesolithic era, invented flour from a necessity to try and break down indigestible seeds. It makes sense that trying to break down 'tough nuts', such as beetle nuts (in the far-east) or chestnuts, or even lentils using tools would have occurred .

We see this behaviour in our primate cousins (those with opposable thumbs) on a regular basis, so it's only natural to draw the conclusion that we did the same. Thus the accidental discovery that mixing with water to make dough, which would dry in the sun would have inevitably led to experimentation with applied heat, would have led to the invention of bread.

Archaeological finds concur with this, with the advent of the wheel happening around the same time - in fact, the wheel may have originally been used as a grinding tool, before an accidental discovery that it could be used to transport the worlds very first processed goods.
