Unless you are from Spain, it may be difficult. However, rumors persist of a few Central American types being allowed in the ranks in the last decade or so. I would travel to Spain and stop by an Army recruiting office and ask. Be careful though if you have a Spanish last name you could windup in their regular army.
BTW, it's really known as as the Spanish Legion, it changed when they stopped actively recruiting foreigners.
