Covenants are contracts between God and mankind. They are consistent and ever-enlarging beginning from the Noahic Covenant, the Abrahamic Covenant, the Mosaic Covenant (aka Sinai Covenant), the Davidic Coventant, and the capstone or culminating New Covenant. Though men break covenants, God keeps His promises.

Yes. Those covenant protectors don't count for anything really. You can (and quite possibly will?) have already killed them once on the way to Alvina, she does not care. Alvina is the touchiest of the covenant leaders, if you betray the covenant and speak to her, she will disappear. It is this 'sin' that matters. Attacking those NPCs while you are a Forest Hunter will break the covenant and anger Alvina, but if you get yourself absolved by Oswald of Carim before speaking to her, then she will be fine, you can rejoin. Similarly you can break the covenant by joining another, and then be absolved. Now you're no longer a Forest Hunter there are no repurcussions for killing the NPCs and Alvina will happily invite you into the covenant as before.
she helped he Jews neighbour escape from NAZI HOLOCAUST. to hide them.

The biblical prophet Isaiah did not break the covenant with God. He faithfully served God and delivered messages of warning and comfort to the Israelites, urging them to repent and return to God. Isaiah is known for his prophecies about the coming Messiah and the restoration of Israel.
God created this covenant between him and Adam and eve to show us that Jesus would come to save us from our sins and also to see if Adam and Eve would trust him.
The three major Jewish covenants are Noah's Covenant, Abraham's Covenant, the Mosaic Covenant (Moses' Covenant.)
Yes, because a covenant means an agreement with God and the Torah describes an covenant.
