Because the nostrils are used for gathering smells. and the separation of timing of arrival of the smell between the nostrils allows animals to determine the direction from which the smell is coming. With just one nostril one would not be able to do this. The single windpipe enables each nostril to gather air at the same rate thereby allowing the timing differential to be determined.
