Europe is a massive continent, with a huge variety of diverse cultures - asking what Europeans eat is therefore completely impossible to answer as it depends where in Europe you live, along with the cultural influences in your area. I'm British living in Cyprus and in the UK my lunch could be anything from sandwich, to soup, to sushi! Yogurt featured, as did fruit. Lebanese foods were in there, along with Italian, Spanish and Greek. It really depended on what I fancied at the time. There is such a wide range of cuisines available that there is no one typical type of lunch. In Cyprus my lunch is generally a mix of perceived "Mediterranean" and Cypriot foods - so perhaps some salad, with olives and feta cheese - or perhaps houmous or tahini salad. In addition some fruit or yogurt. The odd pitta bread sneaks in too. As I said - Europe is too big and way too culturally diverse to have one type of cuisine.
