A big cause of a beefy, sore, red tongue is a B-12 deficiency. B-12 deficiencies show up as a macrocytic anemia, usually without hemolysis. Autoimmune gastritis can cause this due to autoantibodies attacking the parietal cells in your stomach causing a decrease in intrinsic factor, which is needed to bind B-12 to get absorbed.
