The most common examples you will hear involve dog breeding..

It is when you breed to bring out specific desirable traits.

For example; dachshund dogs (aka "wiener dogs')

These dogs are natural but actually man-made in a way. They didn't always exist but in Germany, they wanted to breed a dog that they could use to hunt badgers. They picked various desirable traits that they knew they wanted in the new dog they were to create; a small dog w/ short legs so that they can fit into badger holes to chase them out, very good snout + sense of smell to tract the badgers, long bodies so they could go into the holes...etc

So they went out and picked a dog that was small and a dog that had a good nose and breed the dogs. Every time a litter come out they would pick the puppies with the smallest ones with the shortest legs, longest bodies, best noses..etc and breed them. After breeding them over and over again they began isolating the traits by only breeding the dogs with the desirable genes together, eventually leaving them with what looks like todays wienie dogs to hunt their badgers so they named them dachshunds which means just that; "badger dog."

It's almost like playing God because you're choosing genetics unnaturally but over half of the Dog Breeds available today exist because of selective breeding... sled dogs, hunting dogs, racing dogs, herding dogs..etc because they all have certain traits that needed to be brought out and "perfected" if you will.
