Here's mine:
I am in top shape, prime of my life right now. I weight 205 and I am 6'2. I have been playing Baseball and other sports for 10 years, and it has really showed.
I eat good food, as well. This is a big part of me being as healthy as I am. Lots of lettuce, fruits, tomatoes, vegetables, and meat is in my diet. It's very healthy and it makes me feel great.
When asked to describe your general health, keep the explanation simple. Begin simply with excellent / good / fair, etc. Talk about how you feel on a daily basis without touching on anything too specific or detailed unless you have a problem that affects how you feel on a day-to-day basis, like a chronic condition.
