VSOP stands for Very Special Old Pale (less commonly, but officially according to the BNIC, 'Superior') The youngest brandy is aged for at least four years in barrels, but the average wood age is much older. E.g. the Hennessy Cognac VSOP (Fine de) is is a blend of 4 to 25 year old eaux-de-vie according to some sources.

The abbreviation VSOP stands for Very Superior Old Pale, unofficially also referred to as Very Special Old Pale; the term is used in the distilling industry of the Cognac region to indicate the youngest brandy in a cognac blend has been stored for at least four years in its cask. VSOP is the second grade of cognac; the first is VS (Very Special), or three-star, in which the youngest brandy must be stored at least two years, and the third is XO (Extra Old), in which the youngest brandy must be stored at least six years. On April 1, 2016, this requirement will be reset to ten years.
Very Special (or Superior) Old Pale
A VSOP cognac (= Very Special Old Pale or Very Superior Old Pale) isn't categorically better than a VS cognac (= Very Special) but it's older: A VSOP cognac is at least 4 years old, a VS cognac is at least 2 years old. But in the most cases age means quality or at least value.
There are two regular sizes of cognac bottles (I think this is what you had in mind). In Europe the regular size of a cognac bottle is 700 ml. e.g. the bottle size of this Hennessy XO Extra Old Cognac. In the US the regular bottle is 750 ml. e.g. the D'Ussé VSOP Cognac.
