A human being can survive an average of three to five days without water but this also depends on your age. The more younger you are the more difficult it is for your body to not run water. Water helps our cells function properly without it they may shrink or shrivel up then they're pretty much useless.

A lot depends on various factors:General health of the person

Is the person active or sedentary?

What is the temperature and humidity of the surroundings?

I live in the desert and know that when the humidity drops very low, the temperature is quite hot (100 degrees F) and the person is actively hiking or other such activity, the person may die from loss of fluids and heat stroke after a very few hours. This happened to a pair of hiking adults in this area recently. They had not taken enough water with them and were not use to temperatures found in the desert in summer. They began their hike in the morning and were dead by mid afternoon.
