Likely you can. While technically it just used to regenerate an ion exchange resin, it still has to be pure enough to not add any toxins to the water.

Bear in mind that ion-exchange water softeners may use either sodium chloride or potassium chloride. Neither salt is particularly toxic, but potassium chloride tastes pretty bad.
