I've heard that indeed, artichokes are good for the gallbladder because they can stimulate the flow of bile and fat from the liver. I think Dr. Oz talked about it recently.

I've also read that for people who already have gallstones, artichoke, especially the supplements, could cause the stones to move into the bile duct.

But for most healthy people, artichokes are quite healthy, and are high in vitamins and antioxidants, as well as fiber, and minerals like magnesium. They may even help to reduce cholesterol.
