I can imagine him saying to the Kraken: "This will be the day that you will always remember as the day that you almost caught Captain Jack Sparrow!" Though the inability of him dying is fake. The Kraken, is actually dead thanks to Jack. He is in mortal danger, from Davy Jones' locker. As Elizabeth and Will Turner, try to save him, they actually do seduced danger from Jack Sparrow.
