The laws of the time demanded that she be executed in any number of horrible ways. Her mention of the cats was her desperate plea for supernatural interference, to kill her executioners before she herself was killed. Of course she knew there would be no cats, no good outcome for her.
But someone must have heard her prayers. Bathory was not executed. She was of royal linage and was judged by other royals, who felt locking her away in her own tower was punishment enough. She lived in total isolation until her death years later.
