In the last book of the original Percy Jackson series, "The Last Olympian," Percy and Annabeth do not officially start dating. However, their close bond and feelings for each other are evident throughout the series, and there are hints that their relationship may develop further in the subsequent series, "The Heroes of Olympus." Their relationship is left open-ended, allowing readers to speculate on their romantic future.
I just finished the book and it doesnt say they start dating but you can kind of tell because Annabeth kisses Percy like 3 or more times in the book and they were having a bunch of love talk......near the end of the book they held hands till they jumped in the water and the kissed in the water........at the end of the book they held hands and ran down half blood hill and that's how the story ended......hope this helped
When Annabeth and Percy first met, Annabeth didn't like Percy that much, not as a friend, or anything. But in the first book, Percy, Grover, and Annabeth go on a quest to retrieve Zeus's master bolt. That is when Annabeth started to like Percy as a friend. As the series continues, the two become closer, and start to have feelings for each other gradually. By the third book, the Titan's Curse, it is certain that they both have feelings for each other. And finally, in the fifth book, they finally hook up and start dating.
In the last book of the Percy Jackson series, "The Last Olympian," Annabeth and Percy do not get married. The focus of the book is on the final battle against Kronos and the Titans, rather than their romantic relationship. While their feelings for each other are evident throughout the series, their marriage is not explicitly mentioned in the final book.
Most likely because at the end of The Last Olympian Annabeth says that she wants to make something permanent and Percy agrees with her.

Percy Jackson first kisses Annabeth in the fouth book, Percy Jackson and the Labyrinth, during their escape from a bunch of Telkhines. In the end of the fifth book, Percy Jackson and the Last Olympian, Percy and Annabeth kissed in the hill, after their celebration dinner. Then, the campers, whom all was eavesdropping, lifted them on their soldiers and dumped them into the lake, where Percy then creates an air bubble and had a "underwater kiss of all time".

Percy likes Annabeth in the Percy Jackson series. He does not start having romantic feelings for her until the third book, and they start dating at the end of the fifth book. However, he hinted that he liked Rachael in the fourth and fifth book of the series. But he realized that he loved Annabeth once Rachael became the Oracle. Percy said that Calypso was even more beautiful than Aphrodite, the goddess of love, but he did not mention that he lied her romantically.
