I believe that may be in error and they meant a week's taping because they also say it is 28,000 per season and they show tapes 40 weeks a season.

So the 720 times is spread out over a day and not a half hour and her clapping is light and quick after a person guesses a correct letter. This is also more proof that it is a taping day of 5 episodes since they never have anywhere near 720 letters on a single episode.
