If you're talking about PC: Within Steam, in the My Games tab, right-click the game and choose "Delete local content". Should keep your game saves but remove the game itself.
For xbox you go to your hard drive and delete the game. This isn't very detailed but just go to your hard drive and it is pretty self explanatory from there.
