The last setting will say "Gore"
One problem; The gore in the background will still be their, but there will be no decapitations or blood when you kill an enemy.

Yes you can. All you have to do is press start (or go to the game menu), go down to options and once there you will see a few things listed. One being gore, so just select it and it will be off.
