I would recommend you get the SinglePlayer Commands mod for minecraft. It is very easy to install so don't worry about a difficult setup.
If you are the server owner (or can get the owners to change game mode or just yours) you can switch it to creative mode in the server conf file or by command in game by and op. otherwise a server in survival mode is staying in survival mode.
You need to turn cheats on and then press / and then type in gamemode c to switch to creative mode or gamemode s to switch to survival mode or gamemode a to switch to adventure mode
(this only works if you have singleplayer commands or if your a mod or up in a multiplayer server) /gamemode (name here) (1 for creative 0 for survival) ex: /gamemode blabla34 1 creative or to switch from survival to creative and back just do: /gm
The same way you save in survival. Click the esc button, and then save and back to title screen.
There are two ways to do this, depending on which mode you're on. If you're on singeplayer and have cheats enabled, you can type "/gamemode survival" (without quotation, including the slash) and you will be in creative. However, if you do not have Cheats enabled, there is a tool for changing game modes - see the related links for the MinecraftForum link. If you're in multiplayer, you can change the game mode from survival to creative in the same manner as singeplayer, the only catch is you must be an op. An op is an operator of the server, or better known as an administrator or moderator. -Mr. Andy

In order to switch game modes in a game of Minecraft, you must Save & Exit the world. Then, when you are about to load the world up, find where it says "Survival" or "Creative" and click that button to change the option to you preferred game mode. Once selected, start-up the world and enjoy.
Currently, there is no way to change your game mode in a game (In the Pocket Edition). The default world will put you in survival, but you can make it a creative world by taping the Gamemode button.
If you mean close the window, you click the 'x' in the top right. If you mean launching the game, you click the big button which will say either 'Play' or 'Play offline' in the bottom center of the window.
The only way is to change the game mode to Survival by doing /gamemode 0 or for Adventure, /gamemode 2

The first EVER version of Minecraft was called "The Cave Game" Pre. The first official version of Minecraft was Creative. The first official version of Survival Minecraft was InDev, which is an abbreviation of In Development.
