To sink it, you need v1.4.3 of ship/schiff simulator 2008 to do it. Now go to mission editor, place the 'ocean liner, titanic' on the scenery (in a sea, not a harbour). Now place an iceberg (it's in static objects) and place it in front of the titanic (how far you need it to be). Now go to the waypoints, and click on 'define WP'. Make one for titanic (click on ocean liner titanic, next, iceberg, next and click on trigger_sink at the bottom of the list of types of waypoints). Now you need to give it a radius of the waypoint (how long the green circle is around the waypoint) and a title and description of the mission, save, and go to ship sim 2008/schiff sim 2008/play/custom missions and select your mission, crash into the iceberg and it should work (if it doesn't, comment to me and say what your factual error is)
Enjoy!

Sinking the Titanic can happen different ways in Ship Simulator 2008:
The Ship can hit an iceberg (as it did in RL)
The ship can hit another ship
The ship can run aground.

the water weighs it down, this causes it to sink
You can use your kitchen sink or a puffle bowl and put it on top of a chair.
If you mean a sink that is in a counter, you must choose the appropriate sink in Build Mode and place it into a counter that has already been placed. The counter must be placed first though.
Pumice, a volcanic stone, does not sink in water. There is one type of stone that won't SINK in water.....pumice.
