You can plank fish in the oven or, more usually, on the grill using untreated natural wood. Some wood works better than others for different types of wood - I regularly plank my food - I only plank fish and vegetables - my husband is a vegetarian. If you are good with your hands and have the time you can make your own planks - but do insure it is untreated otherwise you can get sick.

We always use Cedar - I think that that is the standard for planking fish - though I know you can use other hard woods - like oak and alder. I buy from superior planks - there is a wealth of information on their site - www.superiorplanks. com - I hope this answers your question
