To make cheese, you'll need to purchase a cheese maker. Before you can buy it, you need to upgrade your barn to Level 2. That takes 30,000 G, 50 material stone, and 40 lumber. After this, you can purchase the cheese maker from Barbara for 4,200 G. On the plus side, cheese always sells for better than the milk that it's made from! :)
