Go to the settings on the MXB and go to display settings then follow the on-screen guide by choseing your type of plug. Followed by chose your resolution ex.(1080i, 1080p, 450, 720). Your screen will go black and if you have chosen your resolution that your tv can support it will go back to the screen you were before. then you are given a choice of screen size and voila you have sucessfully chosen your resolution as well as plug type and screen size.

No, you can obtain full resolution with s video or component PS3 cables. You will not obtain the HDMI sync that allows the HDTV and PS3 to connect without manual HDTV set switching to the PS3 and back when you turn off the PS3. But this feature was only available with the PS3 slim.

The setting on the TV set for your PS3 is controlled by what input it is plugged into on the back of your TV. You can not change it to VCR on some sets without also switching back to the A/V cable and losing the high resolution. I don't know of any TVs that have an HDMI plug for a VCR.
It supports 720p, 1080i and 1080p. On my television it auto selects 720p unless I disable 720p in the PS3 display settings.
