you can't. new world is there just for "decoration". you can play with new world in Kingdoms expansion set.
On the contrary, the new world is not just "decoration" in the game. You have to wait until they discover that the world is round which happens in approximately 1400. Once this happens and you are up to date on your port building, you can build a port that will allow you to build carracks. once you do this, you can explore west until you reach the new world. There are several factions to fight on the Cuban Island, Florida, Mexico and Brazil.

How do you unlock other factions in Medieval Total War 2?
Go to the Medieval II:Total War folder and find \data\world\maps\campaign\imperial_campaign from the top of the window. Once you are there, find the file descr_strat. Open it with a text editor (Word, or somthing like that). Cut and Paste the 'unlockable' section into the 'playable' section and save the file. Launch the game and you should have every faction available. Make sure to backup all those files you are going to change so if you mess up, you don't have to reinstall the game.
