First, there are four types, or technically "sizes," of fish; Fingerling (lasts 120 seconds, or 2 minuts), Small(300 seconds, or 5 minutes), Lunker (600 seconds, or 10 minutes), and Flawless ("forever;" until you transform your pet again).
