Yes you can use bluetooth to connect a wireless headset to the ps3. I dont know if you could connect anything which wasn't made for the ps3. Like a mobile phone for example.
Yes, it does work with the PS3. Make sure the sound card (usb) is turned ON, and you will need some kind of extension from the head phone audio jack to the TV to be able to hear game sounds through the headset.
