When you get a horse in Harvest Moon DS, it will stay in the stable. Unless you put it out to run freely on your farm. If you chose to let it run freely, don't worry, horses cannot get sick nor die on Harvest Moon DS.

That depends on which Harvest Moon game you are playing. There are very few Harvest Moon games where your character dies.
