The previous patch files will be in the patches folder in the main World of Warcraft folder in program files. The patch files can be deleted once they are installed. any updates they have installed will be part of the main game and cannot be removed.
If you don't like the new features added by the patch you cannot remove these, they need to be installed to play the game.

Once the patches are applied there is not really any reason to keep them around, they just take up space. However, make sure your WoW is running smoothly before you delete them because if you have to reinstall or repair, you might have to do a bunch of downloading, and some of those patches can me huge. If you have access to a second hard drive or if you can burn those files onto a CD/DVD data disc, that would be best, not as much to re download.
