There are a few reasons that a waiter wears white gloves:

1. To measure the restaurants cleanliness. One can easy run a gloved finger over a surface to measure the impeccable cleanliness (or lack of) that surface.

2. To protect the hands from hot plates when delivering food.

3. To prevent fingerprints getting on to plates, silverware and fine china.

4. The customer doesn't have to be discomforted if a waitperson has a cut, a bandage, or a rash on their hand.

5. Wearing clean white gloves give the impression of taking extra care for the comfort of the guest.
