Chsicken is high risk because it may contain salmonella, if chicken is not cooked throughly and above a core temperature of 75 degrees the bacteria can still be alive, also it can support the growth of pathogenic bacteria, and if it's cooked and left to cool bacteria can grow, if refrigerated the bacteria becomes dormant, and if it's not reheated this can cause food poisoning, if chicken is reheated it has to be above 75 degrees c to kill all bacteria, this is out of the danger zone (5 degrees c to 63 degrees, bacteria thrives best between these two temperatures!
