What is the restaurant requirement for bleach to water ratio?

The requirement varies from state to state, and is sometimes based on the application or special needs of the equipment or services provided.

You need to check with your local health inspector. Another useful resource is EcoLabs. They service our restaurant and their staff is amazingly well versed in the local requirements. Either one is going to be able to tell you exactly how to test the concentrations or how to mix the solution as you need it.

For us its 100ppm-400ppm in the dishwasher and 50-150 for table clothes. We use 1/2 cup of bleach per gallon of water for out table clothes. They also need to be kept in the appropriate red buckets at ALL times, no exceptions.
