1. If it's a percentage i.e 12% it means that the actual alcohol content out of 100% is 12 etc. The extra stuff will be, water, yeast, hops, grapes, flavouring, sugar depending on the drink.
2. The volume could simply by the amount of liquid-i.e a litre, 75cl(3/4 of a litre) or 750ml-often on wine bottles.
But 'vol' is the abbreviation of the word volume essentially.
