Most spaghetti sauces come in a vacuum sealed jars, which preserve the contents for a specific shelf life. However, once you open the jar, all bets are off. Refrigerate any left-over contents of the jar and follow the same rules you would for any "left over" and dispose of it after a few days.
The contents are perishable, but resistant to expiration when still sealed from the factory.
