I have made garlic salt very successfully with the following method. Take 1 bulb of garlic, peal and remove tops and tails. Place in a small blender and pulp well. Add 1 cup, 500 grams sea salt and add to blender and mix well. The resulting mixture will be slightly yellow paste. Spread over a plastic tray and place in a very low oven, stirring mixture as it dries. You will find that some will stick to tray but scrape this up with a palette knife. After the mixture is dry, blast again in blender to break down large crystals. The result will be a very strong flavour garlic salt. Add more salt should you wish to reduce the strength f the garlic. Store in a dark place in a airtight Kilner jar or similar.
