Meats do not last long in the refrigerator. Only about 3 to 4 days if it is raw. Then 1 to 2 days longer if cooked and placed in an airtight container. You should always cover meats when stored in the fridge.

Smoked, cooked sausage, such as kielbasa and salami, will last indefinitely at room temperatures without refrigeration except that they will dry out and become hard. In the refrigerator, if sealed in a plastic bag, it will last indefinitely as well. In either case, surface molds may develop which should be removed. Although we are unaware of any toxicity in meat molds, they probably don't do much for the flavor.

One has to be very careful about giving out food safety advice regarding foods, since something like a sausage may mean different things to different people. My interpretation of this question is not that it is about a shelf stable sausage, but of something like Italian sausage, breakfast sausage or a lightly smoked American-style dinner sausage. Those should never be stored at room temperature and they will not last indefinitely in the refrigerator. Any mold means they have spoiled and should be discarded. Use up cooked sausage within 5 days.
