Mcdonalds has changed the oil they cook their fries in, several times over the past five years. First, they eliminated the beef tallow which they were adding to oil. A number of vegetarian and Hindu groups sued them over it. They eventually settled agreeing to remove the tallow and pay out approximately $10M to various activist non-profits. Next, they eliminated partially hydrogenated vegatable oils in response to health critics. As the last fast food restaurant using oil containg trans aftty acids, McDonald's was under tremendous pressure to change their cooking oil. In addition, several sates had banned or were in the process of banning foods from being cooked in oil the contains trans fatty acids. This would have complicated delivery networks and supplier relationships. The current oil they are using is Canola. Canola has a very short shelf life and can easily turn rancid in a warm environment. Moreover, despite claims to the contrary, many people complain that Canola transfers a taste to fried foods.
There was no such enzyme - it is an urban legend. McDonalds has been the victim of a great many urban legends over the years.
You can certainly fry french fries in hot, melted lard. For years McDonalds often used lard for cooking their french fries - giving them a flavor that most of their customers found superior to the fries their competitors cooked in vegetable oil. Frying French fries in beef tallow lard, or other animal fats adds saturated fat to them but gives them a flavor that is difficult to reproduce when they are fried in vegetable oil.
Indeed it does. Their quality control over taste is very specific. Several years ago I was in Europe and had dined at McDonald's in both Rome & Budapest. The taste was identical in both places.

If you start eating healthy when you are young then you will get your taste buds immune to the taste instead of when you are older when your taste buds haven't tasted the food over all your years of age. It won't taste good after you put the food in your mouth.
