Generally, gelatin sealed in a container can last from 12-18 months if refrigerated and 3-4 if stored in a cool, dark area. Open containers go bad after about a week in the refrigerator.

No, you're supposed to keep it cold, but I guess everything goes bad eventually so it could go bad even though you keep it cold.
