No, you can not place chicken skin down a garbage disposal. If you placed chicken skin down a garbage disposal you could back up your drains because the skin does not get broken up by the blades.
If you have a garbage disposal - grind up some ice cubes & a whole lemon. Slice the lemon first and leave the skin on it. If you don't have a garbage disposal - pour a box of baking soda down the drain. Let it set for an hour or two and pour boiling water down the drain.

Yes im training to become a chef and worked in some great fish restaurants and everywhere ive worked all pan fry the fish skin side down first. They either coat the fish in flour and place it in an oiled pan and then flip it over after a bit or what i do is melt some butter and using a pastry brush, brush the fish all over, season the fish and then brush it with oil. pan fry for 2-3 minutes skin side down first and then flip it over!
