"Smoked oysters usually are found to be a light brown color. Occasionally, however, they show a green tinge. This is not a sign of spoilage, but a natural happening due to bad weather.

When the rough seas tear and destroy the oyster beds, the oysters sink to the bottom and must feed on the green seaweed. A large amount of the chlorophyll is retained, and the smoking cure will not cover the green.

The color does not affect the delicate flavor. It has, however, caused questions of concern from consumers."

Smoked Oysters are Good for You!

Oysters are high in Omega-3 fatty acid and taurin, know to clear the arteries and benefit the central nervous system.

Oysters are not only delicious, but they're also one of the most nutritionally well balanced of foods, containing protein, carbohydrates and lipids. Remarkably, oysters contain almost zero fat. The National Heart and Lung Institute suggest oysters as an ideal food for inclusion in low-cholesterol diets.

Oysters contain more proteins and carbohydrates than milk. Oysters are an excellent source of vitamins A, B1 (thiamin), (riboflavin), B3 (niacin), C ( ascorbic acid) and D (calciferol). Four or five medium size oysters supply the recommended daily allowance of iron, copper, iodine, magnesium, calcium, zinc, manganese and phosphorus.

Zinc is a proven immunity booster and may therefore help prevent colds and flu. Optimal zinc intake also promotes growth, mental alertness and aids in proper brain function. According to the American Journal of Clinical Nutrition most people only get about one half of the recommended daily intake for zinc (15 mg. for adults). And just ONE oyster provides close to your entire daily requirements!
