just threw out stored boxes of unopened saltine crackers, it taste like the lard , shortening or oil part of the cracker went rancid, you could eat it but it tasted like bad shorting. or bad olive oil if you ever tasted

It depends on the crackers.

Some varieties may have certain ingredients in them to make them last longer. It also depends on how you store them, if your storage is damp then they will go stale quicker.

Read the use-by date on the packet.

In my experience, not very long. Once you've opened a package it is usually good for 2 weeks or so. If it is still closed it can last for months.
