It was probably the director's choice. It added to the somber tone of the film. Disagree. Casablance was a B movie, and the cheaper B movies of that time were always in black & white to save money. Only the big and expensive movies like Gone With the Wind and The Wizard of Oz were in color.

At the time he filmed it, he had a weekly series-Alfred Hitchcock Presents. He filmed it on that lot and it was set up for black & white. Just a money saving matter.

* Correction - This blockbuster film, Hitchcock's highest grossing film ever, did not choose black and white to save money. Alfred Hitchcock decided the shower stabbing scene was too graphic in color. This 45 second scene took 7 days of shootin with 70 camera set-ups.
