I truly do not believe that he is in love with her. I think that he is using her because of her skills. She is way more a fan girl than Sakura ever was. I still see Sakura and him ending up together. Remember Naruto's promise that he would bring Sasuke back to Sakura.
Karin contains a jutsu called " Heal Bite" that can allow her to heal people by allowing them to bite her so she can pour out her chakra to them to quickly heal their wounds. It takes so much chakra and she can only use it once a day. That is why Sasuke bites Karin so that when he is seriously wounded, he can be healed faster by biting her.

How does karin dies?
Sasuke is battling Danzou and Danzou is close to death and is running out of options, so he grabs Karin off guard and and holds her in front of him. He basically took her hostage right in front of Sasuke. Sasuke being the way he is with revenge uses his Chidori/Lightning Blade and stabs the both of them. Karin does not die, but Danzou does. Karin is mortally wounded. Sakura tracks down Sasuke and finds him with Karin lying on the ground next to him. Sasuke says that if Sakura can kill Karin, she can go with him.
