Why do Edward Cullen's eyes change colors depending on whether or not he is thirsty?

That's like asking why are the voltouris' eyes bright ruby when they get finished. Their eyes change color because they just got finished "eating" so throughout that time, their bodies use up the blood like we use up foods. so when Edwards "full" his eyes are wonderful shade of buttery gold. but when hes thirsty his eyes change from gold to a flat black onyx color signaling that hes thirsty again.

The longer he goes without feeding, or the thirstier he gets, the darker his eyes are.

They go from topaz or a golden butterscotch right after he drinks animal blood, to pure black, when he hasn't fed in two to three weeks.
