The volumes are ppp ( p = piano, also known as soft and very quiet ), pp, and p ( amount of P's depend on how low and soft the music writer wants it; maximum is usually three ). And fff ( f = forte, means loud depending on how many forte marks. Then there'll be mp and mf, which means the loudest for the piano and the softest for the forte.

The overall term is 'Dynamic'. The dynamic of a piece is shown on the score by use of a number of terms and symbols. The three main letters are p, f and m. p represents the Italian word piano which translates literally as soft, f is forte literally loud and m is mezzo which is middle or medium. Combining these letters in different ways enables a composer to describe what the dynamic should be at any point within the music.
